Easy Camping Recipes: Smoky Veggie Chilli Nachos with Guac and Salsa

2 portions | 5 minutes preparation | 20 minutes cooking time

Take your camping meals to the next level with a mix of fresh, vibrant ingredients and delightful textures for a flavorful and satisfying experience!

For the chilli:

  • 1 red onion – diced
  • 1 clove of garlic – crushed
  • 1 red pepper – cut in half and thinly sliced
  • 1 tin of red kidney beans
  • 1 tin of black beans
  • 2 tins of chopped tomatoes
  • 2 tsp tomato puree
  • 1 tsp ground cumin
  • ½ tsp sweet smoked paprika – could be more
  • ½ tsp cayenne pepper – could be more
  • 100ml olive oil
  • Salt and pepper
  • Eat Real Salted Lentil or Hummus Chips

For the guac & tomato salsa:

  • 1 ripe avocado
  • Juice of ½ lime
  • 1 red chilli pepper deseeded and finely diced
  • ¼ small red onion finely diced
  • Small handful of coriander leaves
  • Salt to taste
  • 200g of cherry tomatoes finely chopped
  • Juice of ½ lime
  • 1 green chili pepper deseeded and finely chopped
  • Small handful of coriander leaves
  • Salt to taste

    Step 1

    In a pan, on a medium heat, add your onion and cook for 3 to 5 minutes until soft and translucent. Add your garlic and cook for another 30 seconds until fragrant. Add red pepper and mix so the pepper is well coated and cook for a further 5 minutes. Add your tins of tomato. Turn the heat and when boiling stir and turn down to simmer for another 20 minutes stirring regularly.

    Step 2

    Meanwhile make your guacamole. Add your avocado to a bowl and mash to your preferred consistency, add in lime juice, salt, coriander onion and chili and mix well. Next chop your tomatoes up and add to a bowl with the lime, salt, red onion, coriander and green chilli and mix well.

    Step 3

    When all is ready in a tray pour your Eat Real chips and layer on your chilli in big spoonfuls. Grate some cheddar over this then next add your avocado in spoonfuls, sprinkle your tomato salsa over it all and to finish add a few dollops of sour cream.
