Vegetarian Camping Recipes: Pan Fried Gnocchi With Vegetables

This quick camping meal is perfect for those long days spent outdoors and you want to cook something delicious in no time. With just a few cooking utensils and without much effort, you can conjure up a meal for the whole camping crew.

Ingredients For Pan Fried Gnocchi With Vegetables

1 Pepper
1 Courgette
1 Red onion
250g Cherry tomatoes
70g Pine nuts
3 tbsp Olive oil
400g Fresh gnocchi
2 Bunches of basil
4 Pinches of salt
1 Mini sachet Tomato Mozzarella Seasoning
Alternative seasoning: Pasta Allrounder, Potato Allrounder

Cooking Instructions: Pan Fried Gnocchi With Vegetables


Step 1

Core the peppers and cut into small cubes. Quarter the courgettes, remove the seeds and cut into diagonal pieces. Peel the onion, halve it and cut it into strips. Toast the pine nuts in a pan without fat or oil for about 4 minutes until golden brown, remove from the pan and set aside.

Step 2

Heat the olive oil in the same pan and fry the gnocchi over a medium heat for about 4 minutes. Add the vegetables and fry for another 4 minutes. Season with the Tomato Mozzarella Seasoning and salt. Chop the basil coarsely and mix into the gnocchi pan. Divide between 2 plates and garnish with the pine nuts.
